The BEST way to get the best photos out of your photographer is by doing an engagement photo shoot prior to your wedding day with your photographer. That way they could get to know you more, you get some practice in before the wedding day and you also get some great images you could use to get people excited for your wedding day.
This is the ONLY way you could get the best results out of your photographer, otherwise, everything will look very "cookie-cutter". For those companies that send out random photographers to your wedding day that you dont meet until your wedding, they are just going through motions and getting what they need to get to get the job done, but there is zero connection to you and the results will most likely be less than desireable.
